Meet Sean Burlette - General Manager

Meet Sean Burlette, the General Manager of Grotto Downtown.
With over 13 years of experience with Landry’s, Burlette has worked every front-of-house position before becoming the General Manager. As a certified sommelier with the Court of Master Sommeliers, Burlette brings his beverage expertise to multiple bar programs across Landry’s concepts. His hospitality philosophy is based on his personal motto, “The answer is always yes!” Which reflects his deep commitment to making all guest experiences flawless.

Meet Katelynn Tejero - Sales & Events Manager

Meet Katelynn Tejero, the Sales and Events Manager for Grotto Downtown. With over 19 years of experience in the hospitality industry, Tejero brings a keen eye for detail and precise planning into every event. A proud University of Houston alumna, Tejero joined the Landry’s team in 2011.  She excels at building lasting client relationships while providing exceptional events.

Meet Brian Saldivar - Executive Chef

Meet Chef Brian Saldivar is the Executive Chef of Grotto Downtown. In only two years with the company, he rose from Sous Chef to Executive Chef, proving his leadership and vision for guiding Grotto into its next decade. With more than 20 years in the restaurant industry, His passion for craftsmanship began early, learning hands on skills from his grandfathers before entering corporate kitchens as a teen. In his twenties, he moved to Austin, immersing himself in independently owned restaurants and deepening his passion for Interior Mexican and Italian cuisine. 

Among the many dishes he loves to prepare, his favorites are Tacos de Cabeza and Risotto - two labor intensive traditions that require patience, focus, and respect for technique. From nixtamalizing maize to coaxing creaminess from Arborio rice, it’s the long, meticulous processes that inspire him most. Known for his calm demeanor and eagerness to mentor, Chef Saldivar brings a fun, comical, and humble spirit to the kitchen - earning respect from colleagues at every level. Outside of work, he enjoys woodworking in his garage, bike riding, and spending time with loving wife and beautiful daughters. An outdoor enthusiast at heart, he’s always ready for the next challenge.
